How long can I soak dried fruits in apple cider to make fruit cake ?
Do the soaking fruits need to be kept in the refrigerature to prevent from spoiling ? I know if soaking in rum/wine, they can be kept out at room temperature since the alcohol preserves the fruit. What about apple cider ? Can the fruits be kept soaking in apple cider for 2 days out at room temperature ? Thanks.
As it is cider I would put it in the fridge as there is residual yeast in cider that might start refermenting with the fruit sugars unless kept cool.
